How to Keep Your Knives Sharp
For a home cook, there’s nothing more frustrating and more dangerous than a dull knife. How do you make sure your knives stay sharp?
A dull knife is a cook’s worst enemy. It makes typical slicing and dicing more complicated than it should be, plus it’s also an accident waiting to happen. You should sharpen your knives at least twice a year, or more frequently if you use them daily. While you can send your knives out to be sharpened by a professional, you can do the same at home with a sharpening stone or a sharpening steel. Once your knives have been sharpened, make sure you take care of them properly to help them keep their edge. Nothing ruins a knife like using it for anything other than its intended purpose, so avoid using knives for opening cans or tearing packages open. Also, avoid tossing them in a drawer along with the rest of your kitchen tools or silverware. Instead, store knives properly on a magnetic strip or in a knife block.
